Vegetarian gravy is a delicious and versatile sauce that can be used to top a variety of dishes, from pasta to vegetables to rice. It's also a great way to use up leftover vegetables and herbs. This recipe for vegetarian gravy is made with silken tofu, which gives it a creamy and smooth texture. It's also gluten-free and vegan, so it's suitable for a variety of diets.

Ingredients
1 block of silken tofu, drained and pressed
1/4 cup olive oil
1/2 cup chopped yellow onion
1/2 cup chopped carrots
1/2 cup chopped celery
2 cloves garlic, minced
1 tablespoon all-purpose flour
1 teaspoon dried sage
1 teaspoon dried thyme
1/4 teaspoon black pepper
4 cups vegetable broth
2 tablespoons soy sauce (optional)

Instructions
In a large skillet over medium heat, warm the olive oil. Add the onion, carrots, celery, and garlic and cook until softened, about 5 minutes.
Stir in the flour, sage, thyme, and black pepper. Cook for 1 minute.
Gradually whisk in the vegetable broth until smooth. Bring to a simmer and cook for 5 minutes, or until thickened.
Add the silken tofu and soy sauce (if using) and stir until combined. Cook for 2 minutes more, or until the tofu is heated through.
Serve over your favorite dishes.

Tips
To press the tofu, wrap it in a few layers of paper towels and place it on a plate. Place another plate on top of the tofu and weigh it down with a heavy object, such as a can of beans or a heavy skillet. Let the tofu press for 30 minutes.
If you don't have silken tofu, you can use regular tofu. Just be sure to press it before using.
You can add other vegetables to this gravy, such as mushrooms, zucchini, or bell peppers.
This gravy can be made ahead of time and refrigerated for up to 3 days. Reheat over low heat before serving.

Variations
To make a vegan gravy, omit the soy sauce.
To make a gluten-free gravy, use gluten-free flour.
To make a creamy gravy, add 1/2 cup of cashew cream or almond milk.
To make a flavorful gravy, add 1/4 cup of dry white wine or 1/2 cup of vegetable stock.
