Sushi is a delicious and versatile dish that can be enjoyed as an appetizer, main course, or snack. It is a great way to get your daily dose of omega-3 fatty acids, protein, and vitamins. IngredientsFor the sushi rice:
- 2 cups Japanese short-grain rice
- 1 3/4 cups water
- 1/4 cup rice vinegar
- 1/4 cup sugar
- 1 teaspoon salt
For the California roll:
- 1 sheet of nori (seaweed)
- 1 cup sushi rice
- 1/2 avocado, sliced
- 1/2 cucumber, sliced
- 1 crab stick, cut into strips
- 1 tablespoon mayonnaise
- 1/4 teaspoon Sriracha
For the Philadelphia roll:
- 1 sheet of nori
- 1 cup sushi rice
- 1/2 avocado, sliced
- 1/2 cucumber, sliced
- 1/4 cup smoked salmon
- 1 tablespoon cream cheese, softened
For the spicy tuna roll:
- 1 sheet of nori
- 1 cup sushi rice
- 1/2 avocado, sliced
- 1/2 cucumber, sliced
- 1/4 cup sushi-grade tuna, chopped
- 1 tablespoon Sriracha
- 1/4 teaspoon soy sauce
For the rainbow roll:
- 1 sheet of nori
- 1 cup sushi rice
- 1/4 avocado, sliced
- 1/4 cucumber, sliced
- 1/4 carrot, sliced
- 1/4 yellow bell pepper, sliced
- 1/4 red bell pepper, sliced

InstructionsTo make the sushi rice:
1. Rinse the rice in a fine-mesh sieve until the water runs clear.
2. Combine the rice, water, rice vinegar, sugar, and salt in a medium saucepan.
3. Bring to a boil over high heat.
4. Reduce heat to low, cover, and simmer for 18 minutes.
5. Remove from heat and let stand, covered, for 5 minutes.
6. Fluff the rice with a fork and let cool slightly.
To make the sushi rolls:
1. Place a sheet of nori on a bamboo rolling mat.
2. Spread a thin layer of sushi rice over the nori, leaving about 1 inch of space at the top.
3. Arrange your fillings in the center of the rice.
4. Starting at the bottom, roll the nori up tightly, using the bamboo mat to help you.
5. Wet the exposed strip of nori with water to help seal the roll.
6. Slice the roll into 8 pieces and serve immediately.

Tips- For the best results, use sushi-grade fish. This type of fish has been frozen at a very low temperature to kill any parasites.
- If you don't have a bamboo rolling mat, you can use a clean kitchen towel.
- Wet your hands before handling the sushi rice to prevent it from sticking.
- If your sushi rolls are too loose, try wetting the nori with more water.
- If your sushi rolls are too tight, try using less rice.
- Serve sushi with your favorite dipping sauces, such as soy sauce, wasabi, and pickled ginger.
