Ingredients
1 block firm tofu, drained and diced
1/2 cup ground pork
1/4 cup Sichuan chili paste
2 tablespoons soy sauce
2 tablespoons Shaoxing wine
1 teaspoon ground Sichuan peppercorns
1/2 teaspoon sugar
1 tablespoon cornstarch
1 tablespoon water
1 tablespoon sesame oil
1 scallion, finely chopped
Instructions
In a large skillet or wok, heat some oil over medium heat.
Brown the ground pork until it loses its pink color.
Add the Sichuan chili paste and sauté for a minute.
Add the soy sauce, Shaoxing wine, Sichuan peppercorns, and sugar. Bring to a simmer.
In a small bowl, whisk together the cornstarch and water to make a slurry.
Add the tofu to the skillet and pour in the cornstarch slurry. Stir to coat the tofu in the sauce.
Bring to a boil, then reduce heat and simmer for 5 minutes, or until the sauce has thickened.
