Grilled Salmon with Mango Salsa
Ingredients:

1 pound salmon fillets
1 mango, diced
1/2 red onion, diced
1/4 cup cilantro, chopped
1/4 cup red bell pepper, diced
1/4 cup lime juice
1 tablespoon olive oil
Salt and pepper to taste

Instructions:

Preheat your grill to medium-high heat.
Season the salmon fillets with salt and pepper.
Grill the salmon fillets for 4-5 minutes per side, or until cooked through.
While the salmon is grilling, make the mango salsa. Combine the mango, red onion, cilantro, red bell pepper, lime juice, and olive oil in a bowl. Season with salt and pepper to taste.
Serve the grilled salmon with the mango salsa.


Summer Salad with Grilled Chicken
Ingredients:

1 pound boneless, skinless chicken breasts
1 head of romaine lettuce, chopped
1 cup cherry tomatoes, halved
1/2 cup cucumber, sliced
1/2 cup red onion, sliced
1/4 cup crumbled feta cheese
1/4 cup balsamic vinegar
2 tablespoons olive oil
Salt and pepper to taste

Instructions:

Preheat your grill to medium-high heat.
Season the chicken breasts with salt and pepper.
Grill the chicken breasts for 4-5 minutes per side, or until cooked through.
Let the chicken breasts rest for 5 minutes before slicing.
In a large bowl, combine the romaine lettuce, cherry tomatoes, cucumber, red onion, and feta cheese.
In a small bowl, whisk together the balsamic vinegar and olive oil. Season with salt and pepper to taste.
Add the sliced chicken breasts to the salad and toss to coat.
Serve the salad immediately.


Fruit Smoothie
Ingredients:

1 cup frozen fruit (such as strawberries, blueberries, raspberries, or bananas)
1 cup yogurt
1/2 cup milk
1 tablespoon honey (optional)

Instructions:

Combine all of the ingredients in a blender and blend until smooth.
